Love Muffins- Vegan & Gluten-Free

Food:

Love Muffins- makes 12

8 oz. buckwheat flour or oat flour (you can use your blender or flour mill to grind your own flour, that is what I do, or find at grocery store. Also, I did use my scale to measure the flour. It’s slightly over a cup.)

1/2 c. local honey (I use Clifford Farms)

1 T. baking powder

1/2 tsp. real salt

1 1/4 c. nut milk (I use homemade)

1/3 c. heaping, favorite nut butter (I used Barney Butter Chunky Almond Butter)

1 T. chia seeds mixed w/ 3 T. water

2 T. coconut oil

1 tsp. vanilla

1/4 c. heaping of your favorite jam (I used Amour Spread Raspberry Jam, this would be a great recipe to use your own canned jam)

1. Start by pre heating your oven to 400 degrees. Next line your muffin tin with parchment muffin liners, or if you are like me and ran out of liners oil your muffin pan with coconut oil.

2. In a medium size bowl sift together the flour, baking powder, and salt. Set aside.

3. In a small saucepan heat the coconut oil, nut butter and honey until smooth and mixed well. Do not over heat or let the mixture come to a boil. Take off the heat and add nut milk, vanilla and chia seed mixture. Mix. (I was able to skip this step and just mix everything in a bowl with a whisk because it has been so hot!)

4. Add the wet mixture to the dry mixture and fold all of the ingredients together. Don’t overmix.

5. Using a big spoon, spoon the mixture into the prepared muffin tin, only half way. Next, add a teaspoon of jam to the middle of each muffin. Then spoon more of the batter over the jam, fill to the top.

6. Bake for 22 minutes. Let cool and then devour!

I call these ‘Love Muffins’ for a few reasons, 1. Who doesn’t love nut butter and jelly? 2. I got to use my favorite local jammer Amour Spreads! 3. I have been working on this recipe for sometime and finally cracked it. These are super easy to throw together, are a crowd pleaser and totally worth turning on the oven for. My husband was so happy when he walked in and saw these fresh out of the oven, he immediately shoved one in his face. (Notice in the pic below that one is missing!)

Amour Spreads and I are getting ready to work on a little project together (stay tuned!) and I wanted to make and share these with them. I hope they like how I used their love to share a little love with all of you.

I think these would be amazing with your own canned jam or jelly, you could attach this recipe to one of your jars of jam and give it as a gift. ENJOY!

Farro, Brussels Sprout and Blood Orange Salad

If you follow me on Instagram you saw that I was gifted a whole bunch of citrus. My long time clients Erin and Trey were nice enough to share the over abundance their family had brought them from California. I couldn’t wait to get to the weekend to put it to good use. I had some Brussels Sprouts hanging out in the refrigerator as well as Farro that I brought back from Italy when we were there for the Slow Food International Conference, the perfect fixins for a salad. What I love about this salad is the light flavor with a hearty texture. The Brussels sprouts are raw but when pulled away from the pack are delicate to eat, if you have never tried Farro you must give it a try, it has a surprisingly chewy texture. We can’t forget about the blood oranges, I feel like these jewels are the beets of the citrus family. They stain your hands from their hue, and they can be used in sweet or savory dishes. Nature is so good to us, we must take advantage of our season’s bounty, that is just what I did with this dish. It will warm you like a winter dish but get your taste buds ready for the lighter flavors of spring. Enjoy!

Food:

Farro, Brussels Sprout and Blood Orange Salad serves 6-8

1 c. Farro

3 c. Brussels Sprout leaves

4-6 small blood oranges, segmented and juice reserved

3/4 c. each cilantro and parsley leaves (pull the leaves off the stem and leave leaves whole)

1/2 c. pistachios’, toasted and chopped

10 green olives (I buy Cerignola from Caputo’s Market, they are mild in flavor)

1 T. pomegranate syrup  (I bought this at Black Cherry Market-great place for Mediterranean foods, good friends of our family. If you don’t have this use balsamic vinegar or Slide Ridge Honey Vinegar, I have both but thought the pomegranate syrup would add some additional color as well as sweetness.)

1/3 c. olive oil

2 1/2 oz. Snowy Mountain Creamery Feta (if you want this to be a vegan dish omit the cheese, you can find this at Liberty Heights Fresh)

Salt and pepper

Directions:

1. Toast the Farro in a wide saucepan over medium heat, watch it so it doesn’t burn. When nice and toasted add 1 1/2 c. water and 1/4 tsp. salt, place lid on pot, bring to a boil and then turn down to low and simmer for 15 minutes. When done, drain in a fine mesh strainer to remove any excess water. Place in a bowl big enough to toss all the ingredients together.

2. Prepare the Brussels sprouts, cut off the rough ends and lightly start pulling the leaves away from the pack, it may take 10-12 Brussels sprouts to get 3 c. of leaves and you will have tiny little sprouts let over- save those for something else.

3. Segment the blood oranges, carefully cut the rind off the oranges and then over a bowl to reserve the juice (about 1/3 c.) start to remove the orange segments. Place the segments in one bowl and the juice in another.

4. Whisk olive oil, reserved blood orange juice, pomegranate syrup and salt and pepper to taste. Set aside.

5. In the bowl with the Farro toss in the Brussels sprout leaves, chopped toasted pistachio’s, chopped olives, cilantro and parsley leaves. Pour on the dressing and toss lightly. Arrange the tossed salad in a pretty serving dish and place blood oranges on top. If using feta break it up the and sprinkle on top. Serve immediately.

Nutrition:

Farro- Farro is essentially a form of Spelt. Spelt’s cultivation is thought to have begun sometime during the mid- to late Neolithic (Stone Age), 6000 to 5000 B.C.E. an area that spans parts of modern Iraq, Iran and Jordan, making this one of the earliest crops grown in the Western World! Farro is an Italian staple grain, so when buying look for Farro but know spelt can be used in its place. The texture will be different. Farro is not labeled ‘organic’ but historically has been known to have not been sprayed due to the fact that it will not survive if treated with harmful sprays. Farro/Spelt is an excellent source of complex carbohydrates, complete protein and fiber. Spelt is a good alternative for those allergic to wheat. The gluten found in Spelt is more fragile than that found in wheat, so it is more easily digested.

Brussels Sprouts- 1 c. of Brussels Sprouts contains more than 4 grams of fiber, they are an excellent food to reduce appetite, promote bowel regularity and prevent colon cancer. Plus, Brussels Sprouts are so en vogue these days, I remember being a kid and scared of those nasty buggers- now we eat them weekly when they are in season.

Blood Oranges- We all know oranges are great for their high vitamin C content but did you know that vitamin C and flavonoids are important for the immune system, lens of eyes, adrenal glands and reproductive organs as well as the connective tissue of our body, such as the joints, gums and ground substance. The consumption of oranges and orange juice has been shown to protect against cancer and help viral infections. Yum!

Raw Cherry Chocolate Power Bars- DIY

Raw Cherry Chocolate Love Bars– makes 18 bars

3 c. medjool dates, pitted and chopped

1 c. tart dried cherries (local from Farmers Market, you can also find the the bulk section of most grocery stores)

1/2 c. raw cacao powder (find at Whole Foods or Good Earth)

1 c. walnuts

1/2 c. hemp seeds (find at Whole Foods or Good Earth)

1/2 c. ground chia seeds (I use my coffee grinder to grind, store in an airtight container. Find at Whole Foods or Good Earth)

1/2 c. whole chia seeds (for a little crunch on top, thanks Yelana!)

2 T. tahihi

1 tsp. celtic gray salt

Directions:

1. Place half of the dates, cherries, cacao powder, walnuts, hemp seeds, ground chia (NOT WHOLE CHIA, RESERVE THOSE FOR THE TOP!), 1 T. tahini and 1/2 tsp salt in the food processor. Pulse until well combined. Pour this mixture into a bowl.

2. Place the rest of the dates, cherries, cacao, walnuts, hemp seeds, ground chia, tahini and salt into the processor and pulse again until well combined. Add this mixture to the already processed mixture.

3. Line a large baking dish with parchment paper, make sure the parchment paper hangs over the sides and when folded over covers the entire mixture, this will help when getting the mixture out of the dish. Pour the prepared mixture into the baking dish and spread out evenly with your hands. Press the mixture down and make sure it is even.

4. With a pastry brush or just your hands wet the top of pressed mixture, sprinkle the whole chia seeds over the top of the mixture. Fold the parchment over the mixture, place a heavy book on top and then place in the fridge for a couple of hours or overnight. When ready, cut into pieces and store in an airtight container, place in the fridge until ready to eat, Enjoy!

Chia Seeds: Chia seeds contain omega 3 fatty acids. Omega 3 fatty acids are one of the most powerful anti-inflammatory compounds in nature, as well as being great for the brain. Chia seeds contain even more omega three fatty acids by weight than salmon does. These tiny seeds are also a complete protein, meaning that they contain all 8 essential amino acids that your body cannot synthesize on its own, and must get from food. These little seeds of love need to be ground or bloomed in liquid for your body to absorb and utilize them. Sprinkle on oatmeal, salads yogurt or mix into smoothies.

Hemp Seeds: Hemp seeds is a complete protein source. The oil from hemp seed has the highest percentage of essential fatty acids of nearly any seed on earth! Hemp seed contains over twenty trace minerals, it naturally sprouts on the hemp plant lowering phytic acid (these means no need to soak before you eat) and increasing enzymes which makes the seed even more digestible. Hemp seeds essential fatty acid and protein profile provides a healthy alternative to fish.

Cacao Powder: Cacao contains the HIGHEST concentration of antioxidants of any food in the world! By weight cacao has more antioxidant than red wine, berries, acai, pomegranates and goji berries combined. Antioxidants protect us from age related health conditions and illnesses. They shield our DNA from free-radical damage. Cacao also contains magnesium, iron, chromium, manganese, zinc, copper, vitamin C, omega-6 fatty seeds, trytophan, serotonin, fiber and the list goes on. Cacao is truly a ‘super’ food! We even use it in our coffee on the weekend and I use it in my weekly homemade face mask.

Love:

When I am meal planning for the week I usually plan for one savory snack and one ‘sweet’ snack (the need for a sweet treat is for my honey, but for me it needs to be healthy). This last week I wanted to try my hand at ‘larabars’, have you had these before? They are a great quick healthy snack, especially on the go. In my quest to further my skills in the kitchen and being in control of what goes into our bodies, I couldn’t wait to make my own DIY raw power bars. These are truly ‘power’ bars, full of nutrient dense foods and raw to boot. It helps that they feel like a treat but that will help nourish us when we need that little pick me up mid-morning or mid-afternoon. You can use anything that feels good to you, however you will need the dates and some other dried fruit to hold it all together. But go wild!

Raw Chocolate Banana Love Pie

You are going to love this dessert! It is just the right amount of chocolate and banana, the cashew cream is infused with orange and the melted chocolate and chopped pistachio’s on top- stop! Plus the crust is made of caramely-y dates, salty pistachio’s and cinnamon- Delish. I wanted to come up with something special for a project I have at the end of the month but then realized this would be the perfect dessert for you or your special someone on V-Day. I hope you’ll do yourself a favor and treat you or that special someone (it could even be your mom) to this Love pie. This is me sending love to all of you. Happy Love Day!

Food:

Raw Chocolate Banana Love Pie– serves 8

Crust:

1/2 c. shelled pistachio’s

1/2 c. medjool dates, removed seed and chop

1/4 t. celtic salt

1/2 t. cinnamon

Filling:

1 1/2 c. cashews, soaked overnight

zest of 2 oranges

1/4 c. fresh orange juice

1 tsp. vanilla

1/3 c. coconut oil

1/3 c. maple syrup or honey

1 c. smashed banana’s (2 ripe banana’s)

1/3. c raw cacao powder

Toppings:

Melted Chocolate Conspiracy Chocolate Sauce

chopped pistachio’s

Directions:

1. Start with the crust, place all of the crust ingredients in a food processor. Pulse until ingredients easily stick together when you squeeze the dough between your fingers. Press into the bottom of a spring form pan until evenly distributed. Place in freezer while you prepare the filling.

2. Rinse out the food processor. Place the soaked, drained cashews in the food processor. Add the orange zest, orange juice, and vanilla. Mix together. Gently melt the coconut oil and maple syrup/honey in a small saucepan over med-low heat until melted, when melted add to the other ingredients while the motor is running.

3. Pour half the cashew orange cream mixture over the prepared crust, spread over the crust. With the rest of the cream mixture add the banana and raw cacao powder, mix well. Pour the chocolate mixture over the cream mixture and spread evenly. Place the pie in the freezer for 2-4 hours. When ready to serve, take pie out of the freezer and let sit for at least 30 min. and then slice and serve. Top with melted Chocolate Conspiracy Chocolate Sauce and chopped pistachio’s.

Celery Root, Apple Cilantro Salad– serves 4

Salad:

1 medium celery root- peeled, sliced and julienned

2 medium apples- cored, sliced and julienned (I used 1 granny smith and 1 red variety I got at the farmers market)

1/2 c. fresh arugula

1 c. cilantro leaves- whole leaves torn off stem and lightly packed

1/2 c. pistachios- lightly toasted in a dry saute pan over med-low heat

1/2 c. tart dried cherries- chopped (you can find these in the bulk section of the grocery store, mine are from the farmers market)

juice of one lemon

Dressing:

1/4 c. yogurt (I used Drake Family Farms Goat Yogurt)

zest of 1 lemon, juice of half the lemon

1 T. olive oil

1 T. maple syrup

1 inch ginger- peeled and grated

salt and pepper to taste

Directions:

1. After you have prepped the celery root and apple, place then in a bowl and squeeze the juice of one lemon over the juilenned pieces. Toss lightly with your hands.

2. Next add in the arugula and cilantro leaves, toss lightly.

3. In a small bowl combine the dressing ingredients, season with salt and pepper to taste.

4. Divide the salad mixture between 4 plates, drizzle the dressing over the salad and top with the pistachios and tart dried cherries. EAT IMMEDIATELY! ENJOY!

*This salad is best eaten fresh, it will last up to one day in the fridge BUT do not top the salad ingredients with the dressing or nuts and cherries until ready to eat.

Celery root: Celery root has a number of vitamins and minerals, most notably vitamin C, potassium and phosphorus. Can be used in mashed potatoes, stews and pairs well with meat.

Pistachios: Pistachios are good for heart health, diabetes, healthy blood, nervous system, eye health, the immune system and skin health. Great raw or slightly toasted.

Cilantro: Helps to eliminate the heavy metal build up of mercury and lead from the bones and the tissues in the body. Cilantro contains, folates, vitamin B-6, vitamin C, A, K and loads of iron and manganese.

Love:

One of the reasons I love living in Utah is the change of seasons and all the possibilities of food exploration that it brings with each changing month. I love warm savory dishes in the winter, but this last week I have been craving lighter fresher flavors, probably because we have been bogged down with loads of smog and snow. All of us are longing for our backyards and deck hang outs, but for now we will have to settle for Super Bowls parties and hopefully some cuddling for Valentine’s Day (I have a love filled recipe coming up next week, stay tuned!). In the meantime we can start by enjoying this refreshing, light and crunchy salad that is a vacation in your mouth. Especially after the Super Bowl junk food you might just need this salad to get you back on track. Celery root is a fun seasonal veggie and thank goodness for something fresh during this time of year, it may make you long for summer with its light bright flavor, but hopefully if you are like me it will remind you that those backyards and decks are closer than we think.

Raw Hummus & Goji Berry Lemonade

Food:

Raw Hummus- serves 8, 1/2 c. portions

2 c. raw sunflower seeds, soaked overnight, drain

2/3 c. raw tahini

2/3 c. olive oil

4 garlic cloves, minced

3-4 lemons, zest and juiced (you want to taste the lemon)

1 tsp. salt, more if needed to taste

fresh ground pepper, to taste

-Toppings-

fresh chopped tomatoes

chopped fresh onion, white or purple

oil cured olives, chopped (I buy mine at Tony Caputo’s)

-Serve with-

Fresh collard green leaves, kale leaves, cabbage leaves or romaine leaves

Directions:

1. Place the soaked, drained sunflower seeds in the food processor along with the raw tahini, garlic, zest and juice of lemons. Turn on and begin to process, drizzle in the olive oil while the motor is running.

2. Stop, scrape down sides add salt and pepper and process again. Taste for seasoning. Add more salt and pepper if needed and or more fresh lemon juice.

3. Store in an airtight container until ready to serve. Top with fresh tomatoes, chopped onion and oil cured olives. Serve with fresh collard greens, kale leaves, cabbage leaves or romaine leaves.

Love:

There is a place here in town called Omar’s Rawtopia, it is the only raw restaurant in Salt Lake. When you eat at Omar’s you know the food is of the highest quality and the preparation is nothing short of a labor of love. His hummus plate is one of my favorite dishes, and even though I love going to Omar’s it is much more cost-effective for me to recreate this dish at home. This raw hummus wrapped in collards is what Master William and I have had for lunch for the last two weeks, the temperature outside has been in the high 90’s! To hot to eat anything but raw food! The contrast of the sweet tomatoes with the salty olives and raw onions mixed with the creamy raw humus all wrapped up in a collard green is like heaven in your mouth. This dish is light and you don’t feel bogged down after eating it, it is perfect for this hot weather and even though Omar does it better, my version is a compliment to him and his wonderful place. ENJOY!

Goji Berry Lemonade- serves 2

4 T. dried goji berries (I buy mine in the bulk section of Whole Foods)

3 c. water, divided

1 inch fresh ginger, peeled

1/4-1/2 c. fresh mint leaves

juice of one lemon

stevia and honey to taste

2 mason or kerr jars with lids (I use the pint size)

1. Place 2 T. goji berries in each jar, pour 1 1/2 c. water into each jar. Place the lid on the jars and put in the fridge for 1 hour or overnight.

2. Pour the contents of each jar (goji berries and water) into a blender, throw in fresh peeled ginger, fresh mint leaves, 20 drops of stevia and tsp. raw honey and the juice of one lemon. Turn the blender on high and process for 1 minute.

3. I like the strain mine through fine mesh strainer but you don’t have to. Press all the liquid through the strainer. Pour the mixture between the two jars and serve immediately with a fresh slice of lemon.

I found this recipe month’s ago on one of my favorite blog’s, My New Roots, and have been waiting for the right time to make it. Well, considering that everyday for the last two weeks the temp outside nearly got to 100 degrees NOW was the perfect time to try out the Goji berry lemonade. This drink is so refreshing, the fresh mint cools you off, the ginger is the perfect amount of spice, the tang of the lemon and the sweetness of the goji berries and honey make this the perfect summer mocktail. I think we have had one everyday for the last two weeks! I even made it to take to one of our out-door concerts last Monday night at Red Butte Gardens. This yummy drink goes perfect with anything but has been perfect with my Raw Hummus. ENJOY!

Nutrition:

In an effort to spend more time out doors this summer and spend precious time with family and friends (which is important for our health) I might lay off this part on a few post . What I will say is that summer time is the perfect time to add more raw food to your diet, they are lighter, your body needs those enzymes and everything is at its peak- why not enjoy food in its natural state. Double Chocolate Everything Bars- Travel Food

Food:

3/4 c. buckwheat flour (you can grind your own or find in the bulk section of health food stores)

3/4 c. almond meal (you can grind your own or find in the bulk section of health food stores)

1/4 c. coconut flour (find in the bulk section of health food stores)

1/4 c. raw cacao powder (find in the bulk section of health food stores)

1/2 c. chopped walnuts

1/4 c. hemp seeds

1 tsp. baking soda

1 tsp. cinnamon

big pinch, cloves, pumpkin spice, nutmeg

1/2 tsp. salt

1 c. chickpeas (fresh or canned)

2/3 c. nut milk

1 banana

1/4 c. coconut oil

2 T. tahini (you could use almond butter)

1/3 c. pure maple syrup

1 1/2 tsp.vanilla extract

1 tsp. almond extract

2 carrots, shredded

1/2 dates, chopped

3/4-1 c. vegan chocolate chips, or carob chips

Directions:

1 Preheat the oven to 325 degrees, lightly oil a 13×9 baking dish with coconut oil. In a large mixing bowl mix the buckwheat flour, almond meal, coconut flour, cacao powder, baking soda, cinnamon, nutmeg, cloves, pumpkin spice and salt. Whisk to combine.

2. Next add walnuts, hemp seeds, grated carrots and chopped dates to the dry flour mixture. Toss to combine.

3. In a food processor or high-speed blender mix the chickpeas, nut milk, banana, coconut oil, tahini, pure maple syrup, vanilla extract and almond extract. Mix on high until well combined. Add this mixture to flour mixture. Fold in the chocolate chips. Mix well but don’t overmix!

4. Scrape the well mixed mixture into the lightly oil baking dish. Bake for 35 minutes. Let cool, cut and store in an airtight container in the fridge.

Love:

These little BIG nuggets of love have been a life saver in my life. They are full of yummy healthy ingredients like chickpeas, cacao powder and gluten-free flours! They are super easy to whip up and travel well, l I even packed them for our travels this week to Denver. They are like indulging in a moist chocolate brownie with the goodness of a granola bar or protein bar. I eat five times a day and these have been a great mid morning or late afternoon snack, I will even throw one in my purse if I think I might need something to hold me over. This recipe is adapted from one of my favorite blogs, My New Roots. She posted this recipe in an effort to help all of us with the wows of traveling and the sometimes limited choices when it comes to eating right on the go. These are a new staple snack in my house, and as I sit in a hotel surrounded by chain restaurants I am thankful I packed these morsels of love to keep me nourished.

DIY-Almond/Walnut Butter… Happy B-Day Kimmy!

Food:

Almond Butter- DIY

1 c. raw almonds

1 c. raw walnuts

(I decided to do a combo butta’, but you can just use almonds, or just walnuts or any combination you like.)

Directions:

1. Preheat the oven to 300 degrees. Line a baking sheet with parchment paper and spread the almonds/walnuts across the baking sheet. Place the nuts in the oven and bake for 25-30 minutes. (Until the center of the almond is golden)

2. Take the nuts out of the oven and cool completely. When the nuts are cool transfer them to the food processor. Turn it on, let it grind the nuts for about 2 minutes. Scrape down the side and process again until the nuts turn to butta’. (Be patient this takes a minute, you may need to scrape down the sides a few times.) Transfer to a clean jar with a lid and store in the pantry or the refrigerator.

DIY- DO IT YOURSELF- what a concept! I love when I can take something that usually goes on my shopping list, off. I know exactly what is going in to a recipe and I know exactly how it was prepared. Nut butters are expensive and some of them have sugar, salt or added oils, all of which we can all do without. Homemade almond/walnut butter is a new staple in my house!

Every week in you’ll find glass bowls scattered around my kitchen full of beans, nuts, grain, etc, soaking in water. Why you ask?

In a ‘nut shell’ what we are essentially doing is mimicking nature. Nature acts to protect these little morsels of goodness until proper conditions are present, when it rains these beans, nuts, seeds and grains get wet, their skins soften and the sprouting process begins, they germinate and produce plants. Thus creating a living food.

Soaking beans promotes the elimination of phytic acid which gets in the way of mineral absorption. Not only does soaking beans promote faster cooking time, it also helps improve digestibility because the gas-causing enzymes are released into the water. I like to soak my beans for a minimum of 8 hours to a maximum of 48 hours (if soaking longer change the water daily). Beans are a great source of vegetable protein and after soaking and cooking an easily digestible plant food.

Grains are strengthening, grounding and rich in vitamins, minerals, fiber and protein, little power houses if you ask me, but they two contain phytic acid. Phytic acid interferes with the absorption of zinc, calcium, iron and other essential minerals. Lucky for us phytic acid is water-soluble. So be sure and soak your grains for a minimum of 1 hour and probably no longer than 12 hours.

Oatmeal Banana Bread

Food:

Oatmeal Banana Bread

1c. oats (preferably gluten-free)

3/4c. walnuts, divided

1/3c. coconut flour

1/2 tsp. salt

1 tsp. baking powder

1 tsp. baking soda

4 ripe bananas

1/2c. nut milk (I used Homemade Coconut Milk)

2 tsp. vanilla

6 T. coconut oil (if solid gently melt)

6 T. pure maple syrup

1/4c. sunflower seeds, hemp seeds and whole almonds- chopped

3/4c. vegan chocolate chips

Directions:

1. Start by lining a loaf pan with parchment paper and preheating the oven to 350 degrees.

2. Next place the oats and 1/2c. walnuts in the food processor, process until it looks like flour. Be sure not to over mix.

 3. Place the oat/walnut flour into a large bowl, one that is big enough to add the other ingredients to. Add the coconut flour, salt, baking soda and baking powder to this mixture and mix well with a whisk or fork.

4. Next place the banana’s, nut milk, vanilla, coconut oil and pure maple syrup into the food processor, process until all the ingredients are mixed well. The scent of this mixture is heavenly. Add this mixture to the dry mixture. FOLD all the ingredients together, DON’T OVERMIX!

5. Now add the chopped almonds, the remaining 1/4c. walnuts, sunflower seeds, hemp seeds and chocolate chips. Fold these in gently. Pour the batter into the lined loaf pan and bake for 45 minutes. (Check the banana bread by inserting a toothpick into the center, if it comes out clean it’s ready) Let cool completely before slicing.

Nutrition:

Nuts and seeds- With their gold mine of healthy minerals and their niacin and folic-acid contents, seeds are an excellent nutrition package. They are among the better plant sources of iron and zinc. In fact, one ounce of pumpkin seeds contains almost twice as much iron as three ounces of skinless chicken breast. And they provide more fiber per ounce than nuts. They are also good sources of protein. Each seed has its own individual bang for its bite, reasearch each on and be amazed.

Coconut Flour- Coconut flour has a low glycemic index, which means it’ll keep you fuller for longer and gives you steady, balanced energy. Not to mention its 58% fiber content, ranking it the higher than bran!

Banana’s- They soothe the stomach and strengthen the lining against acid and ulcers. Has antibiotic activity. Bananas feed the natural acidophilus bacteria of the bowel. They are high in potassium which benefits the muscular system.

Oats- Oats provide and abundance of antioxidants and lignans which help protect against cancer and help stabilize blood sugar levels. Rolled oats, which are minimally processed are slightly less beneficial than steel-cut or whole oat groats.

This yummy, decadent, GLUTEN-FREE, VEGAN Oatmeal Banana Bread will blow your mind, it is very similar to my Banana Date Muffins, but without the dairy. With the addition of the oat/walnut flour (which I learned about from My New Roots, and was the inspiration for this heavenly creation) this Oatmeal Banana Bread is on a whole other level. I have made it twice now and we (me, Billy and everyone who I served it to last week) are in love. Get in the kitchen and make a loaf, it’s easy-I SWEAR! Enjoy!
