Smoothie in a Bowl- Thanks Kath!

I wish I could take credit for this recipe but it actually came from a blog that I like to follow, ‘Kath Eats Real Food’. She calls this recipe her Dough Boy Smoothie, the name almost threw me off because I was worried about the texture. I made a little modification with mine so it’s a little less thick, VOILA! This is what has been for breakfast this week, probably next week too! Shh… don’t tell Master William, he is missing the Quinoa Breakfast. Enjoy!

-Smoothie in a Bowl- Makes 2 adult servings or 1 adult and 2 kids

In a blender goes:

1 c. raw oats
1 c. milk (I used coconut milk)
2 T. chia seeds
1 banana (I also added about 1/2 c. strawberries)
cinnamon (maybe 1t.)
vanilla (maybe 1t.)
pinch of salt

1. Mix together with a spoon and place blender in the fridge until morning. In the morning pull the blender out and mix slowly and tell increase power, at this point I add 1 more cup of milk (I used Goat Milk Kiefer). Mix until smooth, pour into bowls and top w/ your favorite toppings.

My toppings:

Chopped walnuts
Fresh Strawberries
Coconut Granola (recipe is on the blog)
Coconut Butter

You could use:

Any other nuts you like, pumpkin, sunflower, almonds
Any other fruit, raspberries, blueberries
Your favorite granola
Almond butter

This is the third attempt to get this recipe on my blog, not sure what the problem is so I’ll just get to the point. The blueprint for this recipe came from a blog I follow called ‘Kath Eats Real Food’, with a few favorite ingredients of my own and another that I love about a friends granola- VIOLA, homemade granola! Enjoy.

-Coconut Granola-
2 c. raw thick rolled oats (there are gluten free ones available)
3/4 c. raw buckwheat groats (these are gluten free, and they are what we use for our raw cereal)
1/4 c. raw macadamia nuts, chopped (these remind us of Hawaii and for some reason I have a surplus of them in the fridge)
1/4 c. sunflower seeds
1/2 c. walnuts, chopped

1/4 c. coconut oil (if its solid, melt gently so it becomes liquid)
1/4 c. brown rice syrup
1/4 tsp. Celtic salt
1/2 tsp. cinnamon
1 tsp. vanilla
1/8 tsp. cayenne (our friend Gwen puts this in hers and we loved it)

3/4 c. raw unsweetened coconut flakes
1/2 c. chopped dried fruit (I used papaya, this also reminds us of Hawaii)

1. Preheat the oven to 300, mix the first five ingredients in a large mixing bowl. Toss together.
2. Mix the next six ingredients in a separate bowl, you may want to whisk to ensure that all the ingredients are well mixed.
3. Pour the wet mixture over the dry mixture and toss all together making sure to coat everything well.
4. Pour mixture into a baking dish (I used my Le Creuset casserole dish because the first batch I used a cookie sheet and the granola got a little toasty) and place on the middle rack in the oven.
5. Bake for 1 hour tossing every 20 minutes.
6. When done baking, take granola out of the oven and toss in the last two remaining ingredients. Toss well and let cool completely, store in jars or containers with a tight fitting lid.

This recipe comes from my good friend Gwen, she is always sharing her new finds in the healthy food world. I was looking for something new, fast, healthy and portable for breakfast during the week for Billy and I, this hit the mark. It’s probably going to be new for you, it was new for us but we love it.

-Raw Buckwheat Cereal-

1/4 c. buckwheat groats (I find these in the bulk section of Whole Foods or Good Earth)
1-2 tsp. sunflower seeds
1-2 tsp. gogi berries

Place all these ingredients in some kind of container with a lid. Fill the container with water just above the ingredients and place the lid on and soak overnight. In the morning drain off the water trying not to spill out the ingredients, rinse 2-3 times with fresh water and drain again. When you’ve drained all the water off top with these ingredients. Enjoy!

1/4. soy, hemp, rice or nut milk
1 T. pure maple syrup, or agave nectar
1-2 tsp. pumpkin seeds
2 T. coconut flakes
a pinch of nutmeg
a shake of cinnamon
1/2 banana

When strawberries and raspberries are in season I use those with or instead the banana.

I love these cookies, my clients love these cookies, my friends love these cookies, you’ll love these cookies. I don’t have a sweet tooth but these hit the spot if you do, there soft and warm and make a great gift to say thanks to someone you care about. These can be made with chocolate chips or raisins, you decide. Enjoy

-Moist Oatmeal Cookies-
3/4 c. canola oil
2/3 c. agave nectar
1/4 c. soy milk
1 egg
1 tsp. vanilla
1 c. whole wheat pastry flour
4 T. flax meal
1/2 tsp. baking soda
1 tsp. salt
3 c. oatmeal
1 c. large chocolate chips or raisins (if using raisins I toss them with cinnamon and nutmeg)
1. Preheat oven to 350 F.
2. Cream together the canola oil, agave, soy milk, egg and vanilla with a whisk until mixed and fluffy.
3. Sift together flour, baking soda, salt and add a little at a time to the creamed mixture whisking lightly to mix together.
4. Stir in oatmeal and flax meal until well blended and then fold in the chocolate chips or raisins.
5. I use a small ice cream scoop to scoop batter onto lined (parchment paper) cookie sheets.
6. Bake for 10 minutes and then let cool for 5 minutes on the cookie sheet, then transfer to cooling rack until completely cool. Store in airtight container, or wrap up as a gift. Enjoy

Sunday, Sunday- 10 Grain Hot Cereal

I don’t know about you but I’m a very routine person, to my own default at times. I’m aware of it enough to know when it is time to shake things up. But Sunday’s is one of those days that our routine makes us feel complete. Food plays a big part of this, at our house we go through food phases that turn into routines for awhile. Recently we used to do fajitas night every Thursday and even my clients would ask ‘ you guys having fajitas tonight, it’s Thursday?’ So for the past couple month’s our Sunday breakfast is a steaming sweet bowl of 10 grain hot cereal, fresh squeezed orange/grapefruit/carrot juice, and of course a luscious chai latte. I think the reason our weekend breakfasts are so vital is because we don’t see each other during the week for that meal, so we really look forward to that time together. When we were dating we would pack up a breakfast picnic and go to the park, but now that we have our own house we enjoy our comfy couch or the deck in our back yard. I hope this recipe feels with you warmth and and love. Enjoy.

*Whole grains in your diet may reduce your risk of certain chronic diseases. Certain cancers especially gastrointestinal cancer. Heart disease: antioxidant’s contained in whole grains may work with fiber and other compounds to reduce your overall risk.
-Hot Cereal-
I buy Bob’s Red Mill 10 Grain Hot Cereal
1. We follow the directions on the back, but we split it in half. They suggest using water but we use soy milk or soy delicious coconut milk.
2. When it is done cooking we scoop into two bowls and top with sliced almonds, walnuts and a drizzle of agave syrup.* Agave syrup if you don’t know about it is like honey but it is a low glycemic  sweetener. That means it won’t raise your blood sugar it is natural and is 25% sweeter than sugar. It can also be used in place of sugar when baking, for every 1 cup of sugar in a recipe you only need 1/3 cup of agave. AWESOME, give it a try.
-Orange/Grapefruit/Carrot Juice-
This makes a fair amount of juice for two but I bet you could get 4 small servings.
8 oranges, peeled
4 grapefruit, peeled
6 carrots
1. We have a juicer so we juice all of these together and divide between glasses. If you have a good blender you could try it that way. You would probably want to strain it first and then divide between glasses.
