Taco Soup- Cosmo Hippie Style

Food:

Taco Soup- Cosmo Hippie Style

1 lb. grass-fed beef (I used Canyon Meadow Ranch available at Tony Caputo’s on 15th&15)

1 15oz can black beans, drained and rinsed (look for BPA free cans)

1 15oz can kidney beans, drained and rinsed (look for BPA free cans)

1 15oz can aduki beans, drained and rinsed (look for BPA free cans) * I usually cook my own beans but when in a pinch I let the store help me out. I used Eden canned goods.

1 8oz can tomato sauce (again, BPA free can)

1 jar home canned tomatoes w/their juice (if you don’t have this, use a large can of your favorite tomatoes)

1 4oz can diced green chilies

1 large onion, chopped

4 cloves garlic, chopped

2 T. mexican spice mixture (recipe to follow)

1 package dry Ranch Seasoning (I got this tip from my cute friend Trish)

2c. water

Mexican Spice Mixture:

6 tsp. cumin

3 tsp. chile powder

1 tsp. chipotle powder (I used cayenne pepper)

2 tsp. salt

1 tsp. pepper

1 tsp. oregano

2 tsp. garlic powder

-mix these all together and keep in an airtight jar to use for your recipes, I got this recipe from Vogue Vegetarian.

Directions:

1. Place a large saute pan over medium heat drizzle in 2 tsp. canola oil. When its hot add the onions and garlic, start to saute. Season with salt and pepper. After about 5 minutes add the grass-fed beef. I use a potato masher to break the meat up. Continue to saute until the meat is almost cooked through.

2. While the meat mixture is sautéing place the rinsed and drained beans, tomato sauce, jarred tomatoes, 1c water and chilies in your crock pot or a big soup pot-set aside.

3. Next add the spice mixture and dry ranch packet to the meat mixture, stir to combine. When this has cooked for about 2-3 minutes add 1c. water and let the mixture simmer until the water has evaporated. (This will concentrate the flavors and will be amazing.) When the water is gone, turn off the heat and add the meat mixture to the bean mixture. Stir to combine all the ingredients.

4. Turn your crock pot on low and let the it go for a few hours. If using a soup pot turn to low and let simmer away until ready to eat. Taco Soup is like chili, it gets better with time!

Toppings-

Sliced avocado

Sour Cream or yogurt, shredded cheese

Hot Sauce

Quinoa Cornbread (we crumbled this on top and it was FABULOUS!)

Nutrition:

Grass-fed beef- Is lower in total fat, 3x omega-3 (diet high in omega-3 reduce Alzheimer’s, Arthritis, ADD, Cancer, Depression), 3x conjugated linoleic acid (anti-cancer agent, reduces risk of diabetes), 4x vitamin E (reduces risk of cancer, heart disease, anti-aging properties), 2x vitamin A (important for vision and bone growth, maintains integrity of skin, regulates immune function). COWS EAT GRASS NOT CORN!

Everyone grew up with a version of this classic. I used to make it for Bill-y all the time in the beginning of our relationship, but I got burned out on it and the fact that we don’t eat a lot of meat at our house, this recipe hasn’t been made for quite some time. Well, I wanted to make Bill-y something yummy for Super Bowl so VOILA! I took some old ideas and mixed them with some new ideas and the result was probably the best Taco Soup I have ever made. We have had it for two dinners already and still have leftovers, I was thinking about using the leftovers on a baked potato YUMMY! Enjoy!

Chana Masala

The aroma from these modest seasoning will fill up your whole house with food love.

Food:

Chana Masala- Makes 4-6 servings

1/c. olive oil (you could use canola oil or I think coconut oil would be amazing)

1 medium onion, chopped

2 garlic cloves, chopped

1 tsp. cumin seeds (I didn’t have cumin seeds so I just used ground cumin)

1/2 tsp. ground coriander

1/4 tsp. ground ginger

1 tsp. garam masala, plus more for serving (I found this spice in the bulk section of my grocery store, they carry spices in bulk-AWESOME)

3 green cardamom pods, lightly crushed under the side of your knife

1 tsp. salt, or to taste

1 28oz. can whole peeled tomatoes (I used 2 jars of my canned tomatoes)

1 T. cilantro, chopped, plus more for serving

pinch of red pepper flakes, more to taste

2 15oz cans of chickpeas, drained and rinsed

1/3-1/2 c. plain yogurt (I used greek yogurt, if vegan omit yogurt)

water

a few lemon wedges, for serving

*I added a container of fresh spinach just before serving. Turn the heat off before adding the spinach and the let the heat from the mixture wilt the spinach.

* I served the Chana Masala over Millet, Millet is a gluten-free grain that you can find in the bulk section of the grocery store. It has a 2-1 cooking ratio, I like to toast my millet in a dry saute pan over medium heat until just starting to brown. Add the water and a pinch of salt, place the lid on the pan and turn the heat to low- cook for 20-25 minutes and fluff with a fork.

Directions-

1. Pour the olive oil into a dutch oven or large pot and turn the heat to medium. Add the onion and cook stirring occasionally until deeply caramelized. It’s okay if they get a little charred in spots, be patient! The more color the more full-flavored the dish will be.

2. Reduce the heat to low. Add the garlic, cumin seeds, coriander, ginger, garam masala, cardamom pods and salt. Cook stirring constantly until fragrant and toasty, about 30 seconds. Add 1/4c. water and stir to scrape any brown bits off the bottom of the pan. Cook until the water as evaporated completely. Pour in the juice from the tomatoes, use your hand to break up the tomatoes before adding them to the pot.

3. Raise the heat to medium and bring mixture to a boil. Adjust the heat to maintain a simmer, add the cilantro and cayenne and continue to cook gently, stirring occasionally until the mixture reduces and starts to thicken, about 5 minutes. Add the chickpeas stirring well and cook for 5 minutes. Add 2 T. water and cook another 5 minutes, add another 2 T. water and cook until absorbed, a few minutes more. This process helps concentrate the flavors as well as it makes the chickpeas more tender and toothsome. Taste and adjust seasonings as needed.

4. Stir in yogurt if using and fresh spinach if using. Serve over rice or grain of your choice and garnish w/chopped cilantro, slice of lemon and a pinch or two of garam masala.

Nutrition:

Chickpeas- Chickpeas are a good source of protein and fiber. They can help lower cholesterol and improve blood sugar levels, making them a great food for diabetics and insulin-resistant individuals. Serving them with high quality grains (like Millet), garbanzo beans are extremely low-fat, complete protein food.

Spinach- Spinach is an EXCELLENT source of vitamin K, carotenes, vitamin C and folic acid. Historically it was regarded as a plant with remarkable ability to restore energy, increase vitality and improve the quality of the blood. Spinach contains twice as much iron as most other greens, it is also one of the most alkaline-producing foods- making it useful in helping regulate body PH. Spinach, like other chlorophyll (green) and carotene containing veggies is a strong protector against cancer.

Millet- Millet is generally superior to wheat, corn, and rice in terms of its protein content. Millet is also a good source of minerals phosphorous and magnesium as well as B vitamins such as thiamine, riboflavin, niacin and B6. It is a gluten-free grain and like other grains is a good source of fiber and offers protection against heart disease, diabetes and cancer.

I found this recipe in a book that we read for Slow Food Book Club called ‘A Homemade Life’ by Molly Wizenberg. I read that book in two days this fall on a little getaway that Bill-y and I took to Sundance after a sad loss we had just went through. This book was a perfect escape, and I knew the second that I read the recipe for Chana Masala that we I had to make it! In the book it says that this dish is better after a few days, so I made it last Monday and we had it for Wednesday nights dinner, then again for lunch on Sunday and the rest will be eaten for tonight’s dinner. It’s delish, a great vegan/vegetarian meal and a perfect winter dish to warm you up. Enjoy!

Creamy Cauliflower Pasta

Creamy Cauliflower Pasta

 Food:

Creamy Cauliflower Pasta Serves 6

1 head cauliflower, cut into florets

1 lb. whole wheat pasta

1/3 c. extra virgin olive oil

4 garlic cloves, thinly sliced

1/2 c. dry white wine (if you’re not a drinker, start! j/k- sub with veggie broth)

1 1/2 T. chopped fresh oregano

1/4 c. kalamata olives, pitted and chopped (or whatever kind you like, I like green cerignola olives from Tony Caputo’s)

1 t. red-pepper flakes

4 sprigs parsley, stemmed and chopped (I use a bit more, I like parsley)

salt and pepper to taste

1/4 c. shredded Asiago or Parmesan cheese (about 1oz.) (if vegan omit cheese or sub w/vegan cheese)

*variation- add small can drained and chopped tomatoes to the skillet when you add the wine. (I do this and love it, I used my own canned tomatoes)

Directions:

Bring a large pot of salted water to a boil over high heat. Add cauliflower and cook for 5 mins, or until tender. Remove with a slotted spoon to a medium bowl, reserving the water. Cook the pasta according to directions in the reserved water. Drain and transfer to a large serving bowl.

While the pasta is cooking, in a large skillet, heat the oil over medium-high heat. Add the garlic and cauliflower and cook for 5 mins, stirring and breaking the cauliflower into bite size pieces. Add wine, oregano, olives, red-pepper flakes (and tomatoes is using) and cook for 3 mins or until the cauliflower is very tender. Add parsley and season with salt and pepper to taste. Pour over pasta and toss to coat well. Top with cheese.

Nutrition:

Whole Wheat Pasta-  Unlike traditional pastas made of refined durum wheat, or semolina, whole-grain noodles don’t lose their bran and germ during processing. Bran, the outer skin of a whole grain, and the germ, or embryo of the grain, carry considerable healthful fats, protein, antioxidants, B vitamins, minerals, and fiber. One of these minerals, magnesium, increases the body’s sensitivity to insulin, which may help to lower the risk of diabetes. And dietary vitamin E, folate, and fiber may reduce the risk of heart disease. Another thing high-fiber diets might do is drive down harmful glucose, insulin, and fat levels in the blood. Love:

I love this recipe because it’s fast, easy, healthy and will feed a crowd. I recently made it for one of our holiday hangouts with the friends and everyone enjoyed it including the kids, YAY! Home Run! Cauliflower is a winter veg and my Whole Foods has had it on sale, so it’s been a great winter dinner dish. We like to toss in some fresh spinach or arugula for that extra green veggie punch. This recipe came from of my favorite cookbooks ‘Simply Organic’ by Jesse Ziff Cool- a Cookbook for Sustainable, Seasonal and Local Ingredients. Try it, you’ll love it. ENJOY!

This wonderful, easy recipe is actually my creation, but I have to say that it is a hybrid of a recipe from the cookbook ‘Small Plates, Appetizers as Meals’ by Marguerite Marceau Henderson (who is actually a SL local). No matter who I make this recipe for they always end up loving it. I have made it with roasted peppers in place of the tomatoes and I’ve also tried it with fresh and roasted tomatoes, just this last July 4 I added artichokes to the mix. So whatever your preference I’m sure it will be amazing. Enjoy!

-Bruschetta- (measurements are exact but pretty close)

2-4 cloves of garlic, minced
2 shallots or a small onion, diced
1-2 T. capers, liquid drained
1/2 olives, chopped (I think I used a kalamata olive mix)
1/2 c. basil, chopped
8 Roma tomatoes, chopped (I have roasted the tomatoes to add more flavor, in the above pic I used roasted tomatoes in olive oil from Tony Caputo’s)
8 oz artichokes in olive oil, chopped (I got my at Caputo’s but you can totally used canned)
1 t. salt (I like Celtic gray salt)
1/4 tsp. fresh ground pepper
1/3 c. balsamic vinegar
1/3 c. olive oil

1. Place the first 7 ingredients in a bowl.
2. Mix the balsamic vinegar, olive oil, salt and pepper in a bowl. (A little trick I do is put pour the balsamic in first and then slowly whisk in the olive oil. I think it mixes better that way.)
3. Pour the wet mixture over all the other ingredients and mix well.
4. Marinate in the fridge for at least an hour. Serve.

Can be served with:

Sliced baguette (I love Crumb Brothers, or Volkers)
Over grilled fish or chicken
Or made into a sandwich w/ fresh sliced Mozzarella (when I do this I use the roasted bell peppers in place of the tomatoes)

Roasted Fennel Tomato Soup

Well yesterday was the perfect day to have soup and sandwich’s due do the fact that it snowed 5″ at our house, seriously! Saturday was warm and beautiful and great fish taco weather and them BAM, more snow. Any one who lives in Utah just knows that this is spring time weather but I know I speak for many of us when I say “enough already”. But- it’s great to make one of my favorite soups and cuddle up with Billy on the couch and do nothing. Now the weather looks crappy again this weekend so maybe there is time for you to whip up a batch of this yummy soup. Enjoy!
-Roasted Fennel Tomato Soup-

1 large onion, skin removed, cut in half and both halves quartered (total of eight pieces)
1 large fennel bulb, leafy top removed (cut off), cut in half and quarter both halves
4 large garlic cloves, skin removed
2 carrots, chopped
7-8 c. pureed tomatoes, (I used 2 16oz jars of my canned tomatoes)
2 c. vegetable stock (I used homemade)
1tsp. coconut oil (for sauteing the carrots), you can use whatever oil you have
2 tsp. grape seed oil (to drizzle over the vegetables before roasting) whatever oil you have
Salt and pepper

1. Preheat the oven to 400 degrees. Place the chopped onion, fennel, and garlic on a cookie sheet lined with parchment paper, drizzle with oil and season with a little salt and pepper. When oven is ready place the vegetables in the oven and roast for 30 minutes, turn the vegetables over once during that time.
2. When vegetables are done pull out of oven and set to the side.
3. In a large pot or dutch oven heat the coconut oil over medium heat, when melted add the carrots and saute until a little browned on both sides. Add the roasted vegetables and toss around for just a minute.
4. Add the tomato puree, veggie stock and season with salt and pepper. Bring to a boil, then turn down to a simmer and simmer for 30 minutes with the lid askew. After those 30 minutes, puree the soup using a hand held blender or you can use your tradtional blender.
5. Taste for salt and pepper, and sevre hot.

Yummy! I made this soup at the beginning of the week and it was super easy and super delish! The blueprint for this recipe came from my Whole Foods App on my phone, I did add a few things of my own of course. Now listen it has been beautiful here (SLC) yesterday, today and hopefully tomorrow but then Sunday more rain and chilly. No big deal make a pot of this soup and some tuna sandwiches and it will be a great day. I think when I make this soup again on Sunday I am going to use Quinoa instead of the Bulgar. I’ll be sure to update y’all on which one is better. Good luck and Enjoy!

-Warm Bulgar Soup-

2 tsp. Coconut Oil (this is what I saute with)
1 carrot, diced
1/2 c. leafy celery, diced
1/2 purple onion, diced
1/2 yellow onion, diced
1 garlic clove, chopped
1 jar tomatoes (I used my own canned tomatoes), or 14oz can
1 tsp. ground coriander
1/2 tsp. cinnamon
1 c. Bulgar (I get mine in the bulk section at Whole Foods), this is also what you use for tabbouleh
1/4 c. chopped parsley
1 T. fresh thyme, chopped
1 lemon, juiced and zest
3 c. chicken stock (I used my homemade stock)
2 c. vegetable stock (I used my homemade stock)
Salt and Pepper
Olive Oil and Parmesan Cheese, for garnish

1. In a large pot or dutch oven warm the coconut oil over medium heat, when it starts to sizzle just a bit add the onions and start to saute. After about 2 min add the carrots, cook for another 2 min then add the celery and garlic and saute all together for about 5 min. Salt and pepper lightly.
2. Next add the coriander and cinnamon and stir around to coat all the vegetables. When the spices start to stick to the bottom of the pot add the tomatoes and make sure to scrape the spices off the bottom of the pot. Next add the chicken and veggie stock (side note: you can use all chicken stock or all veggie stock, whatever you have) and bring the mixture to a boil. Salt and pepper lightly.
3. Add the Bulgar, turn stove to a simmer and cook with the lid on for about 10 min, check to see if the Bulgar is softened if not cook another 5 min. Taste the broth for salt and pepper, add more if needed.
4. Remove lid and add the fresh herbs, juice and zest of lemon and stir to combine. Turn the heat off and get ready to serve.
5. Ladle the warm soup into individuals bowls and drizzle some olive oil and sprinkle a bit of Parmesan cheese on top, VIOLA! Mangie, Mangie! (that means EAT, EAT in Italian)

Fabio’s Lazy Tuna- Cosmo Hippie Chef Alert!

I didn’t realize until this morning that this dish is like a one dish fish cake! Fish cakes are like crab cakes that have potatoes in them, and probably the reason this is called Fabio’s Lazy Tuna is because you make it in one big dish instead of individuals cakes. Maybe I shouldn’t be drinking Dirty Martini’s when I’m eating dinner, these things would come to me sooner.
Anyways this dish comes from one of my favorite shows on the Cooking Channel, David Rocco. David and his wife live in Florence, Italy and sometimes he’s at home cooking or sometimes they are out road tripping and he’ll make a dish the is special to that region. I saw him make this this twice and thought it looked interesting, and it is.
I think this dish would be a great to entertain with, it’s easy, fresh, lighter than a traditional fish cake, delicious and something new and fun. I hope you’ll try it. Enjoy!
-Fabio’s Lazy Tuna-
6 potatoes, boiled, peeled and finely chopped (mine were organic, local cal whites, similar to russets)
3 cloves garlic, finely minced
1 T. chili peppers (I used dried)
bunch fresh Italian parsley, chopped (I used about 1/2 c.)
salt and freshly ground pepper
1 1/2c. olive oil
1 T. fennel seed, crushed (I used my mortar and pesol)
2 T. lemon rinds or zest
bunch of basil, torn (I know basil is not in season but I was able to find organic basil at the store)
8 peeled plum tomatoes, coarsely chopped (I used my own canned tomatoes, but I used a little less because I added 1/4 c. roasted red bell peppers as well)
1 1/2 lb. fresh tuna, thinly sliced (Lucky for me my buddy Dave owns a sushi restaurant- Sushi Groove, so I was able to get a pound of fresh ahi from him. But you can just hit up your favorite fish shop)
1 1/2 c. bread crumbs (I used a baguette that was leftover, I pulsed it into crumbs in the food processor and then toasted it for a minute in the oven to make them extra dry)
1. Preheat the oven to 400 degrees.
2. In a large bowl, add potatoes, garlic, chili peppers, half the parsley, salt, pepper to taste. Add 3/4 c. olive oil and mix well. Spread the potato mixture on an ovenproof pan, packing the mixture so it serves as a solid bed for the tuna.
3. Spread half of the fennel seeds, lemon rinds, basil and pieces of the plum tomatoes sparingly (roasted bell peppers ,if using) on top of the potato mixture.
4. Add the tuna slices on top covering the baking dish.
5. Spread the remainder of the fennel seeds, lemon rinds, plum tomatoes (bell pepper, if using)
and the rest of the parsley on top of the tuna.
6. Generously sprinkle the bread crumbs, and drizzle the remaining olive oil on the top.
7. Bake in the oven for 10-15 minutes. (Depending on how well you like your tuna) Serve!

Tomato Vinaigrette

This is one of my go to dressings for salad, marinades or whatever you want. It’s great when your craving tomatoes in the winter, you can use organic tomato sauce or your own canned tomatoes, pureed and strained. It’s easy, throw all the ingredients into a jar and shake. Enjoy!
-Tomato Vinaigrette-
1/4 c. fresh lemon juice
1/4 c. balsamic vinegar
1/2 c. olive oil
1/4 t. dry thyme, basil, oregano
1/2 t. garlic salt
1/2 t. salt
1/4 t. onion powder
1/4 t. fresh ground pepper
1/4 c. tomato sauce
*optional- fresh chopped garlic
1. Pour all the ingredients into a jar with tight-fitting lid. Place the lid on the jar and shake all the ingredients together until well blended.
2. Refrigerate for at least one hour. Ready to use!

In the summer when fresh herbs are available you could swap them for the dry herbs.
P.S. I use my mortar and pestle to grind all the herbs, salt and pepper and onion powder together before adding them to the other ingredients.

This recipe will make you look like a rock star in the kitchen. This is one of those recipe that I pull out when I want to blow someones socks off. My friend Kim laughs when I say “I swear it’s easy” when it comes to a recipe, but I SWEAR IT’S EASY!!! I wish I could give credit where credit is due but all I can tell you is our old friend Alan Daly gave me this recipe and I love it. This is a great dish to try out on your in-laws, a new love, and old love or maybe just for your friends. Enjoy!

-Pasta alla Vodka-
3 T. olive oil
4 garlic cloves, thickly sliced
1 onion, chopped (this is not in the recipe but I like it)
1/2 c. chopped bacon, go for the meaty parts (I use Clifford Farms)
1/4 tsp. salt
1/4 tsp. pepper
1/4 tsp. red pepper flakes
1 T. chopped fresh rosemary
1 1/2 T. chopped fresh sage
1/2 c. vodka
1 1/2 c. tomato sauce
1 1/2 c. veggie stock
1 lbs pasta
Parmigiano Reggiano Cheese

1. Heat the oil in a large saute pan set on medium heat until sizzling, about 2 minutes.
2. Saute garlic, onion, bacon or prosciutto, salt, pepper, red pepper flakes, rosemary and sage for 2-3 minutes, until the bacon is beginning to brown.
3. Turn off heat, stir in vodka, turn heat back on and scrape up any brown bits that have accumulated on the bottom of the pan. Cook for 2-3 minutes.
4. Add the tomato sauce and chicken stock, stirring well.
5. Bring to a boil, reduce the heat to medium low and cook, uncovered for 30-40 minutes, stirring occasionally.
6. Cook pasta according to the directions, once the pasta is finished pour the finished sauce over the pasta and cook, stirring over medium heat for 3 minutes.
7. Sprinkle cheese over the pasta and mix well.

DIY Recipe- Homemade Pizza Sauce

We love making homemade pizza at our house, especially in the summer out on the grill. So now that it’s cold and miserable outside we had to come up with a plan B. Lucky for me Big Mike (my mom’s fiance) gave us a pizza stone, so decided to try it out Saturday night. I had the pizza dough, mushrooms, kale, cheese, vegan sausage, but no sauce. Here’s what I came up with. P.S. I joke that if my husband approves it must be good, he’s very picky about his sauce.

-Pizza Sauce-
1 T. olive oil
1 onion, chopped
3 garlic cloves, minced
2 c. pureed tomatoes (I used my canned tomatoes, and strained them through a fine mesh strainer to remove any seeds)
1/4 c. ketchup
1/4 tsp oregano, basil, sugar
salt and pepper
1. Start by sauteing the onion and garlic in olive oil in a sauce pan over medium heat. Saute until the onions are soft. Season with salt and pepper.
2. Add all the other ingredients and simmer the sauce until it thickens, maybe 20 minutes. Taste the sauce to see if you need to add more salt and pepper.
3. Use on your next homemade pizza.
